Easy Quinoa-Kale Patties:

  • Cook the quinoa
    • Let 1 cup quinoa soak in two cups of water in a medium saucepan for 15 minutes
    • Bring the water to a boil, then reduce to a simmer
    • Cover, and let simmer for 20 minutes
    • Remove the lid, fluff the quinoa with a fork, and let it come to room temperature
  • Steam the kale
    • Steam about 6 kale leaves for just 30 seconds to get them soft
    • Chop the kale into small pieces
  • Prepare the other ingredients
    • Beat 4 eggs in a separate bowl
    • Dice one small white onion (scallions can also be used for a milder onion flavor)
    • Mince 3 cloves of garlic
    • Chop ¼ cup of parsley
    • Zest half a lemon
  • Make the batter
    • In a large bowl, combine the all of the above prepared ingredients, along with ½ cup parmesan cheese, 1 teaspoon cumin, 1 teaspoon salt, and 1 cup of panko breadcrumbs
    • Mix together until blended
  • Cook the patties
    • Heat 3 tablespoon of vegetable oil in a skillet
    • Form your quinoa patties – you can use your hands or an ice cream scoop to create uniform-sized balls, which can be flattened into patties
    • Cook about 6 patties at a time, but not so many that the pan is overcrowded
    • Cook on each side about five minutes or until golden brown
  • Serve the patties
    • Once the patties have cooled, you can serve them with avocado slices, chopped cilantro, lemon juice, or a topping or sauce of your choosing.
